One of the biggest obstacles to making changes in your diet, is the challenge of taking a new perspective on old favourites. It seems almost heretical to put different combos together! But this is what I do most of the time.
Smoked salmon with roasted courgette slices is a regular breakfast in our house because it is so quick, an anti aging meal choice and paleo!
Having dumped virtually all gluten products from my diet I embrace experimenting with different options that do the same job. The oven roasted courgette slices replace wheat or rye toast.
Breakfast can seem the worst meal of the day to make major changes but time wise this dish is not a problem. However it does involve some alternative thinking. When you get up in the morning and put the kettle on, slice the veg and pop them in the oven so they are cooking whilst you shower or exercise. This will only take around 10 minutes in a hot oven – that’s all. This is the easiest option but you can of course grill them if you prefer.
Pre heat oven: hot 200°C/400°F/Gas 6

1 100g – 120g Pack of smoked salmon, organic preferably
1 large courgette person, sliced lengthways
1 Tbl Odourless coconut butter/olive oil
Before you do anything turn on the oven and preheat to 200°C/400°F/Gas 6.
Take a shallow baking tray; lay on a sheet of baking parchment. You don’t need to cut to size, just ensure the veg do not stick. Add the oil or butter and pop in the oven to heat through
Top, tail and slice the courgettes lengthwise .5 cms/1/4 inch; basically just not too thick. Coat both sides in the melted oil, season with a little salt and pepper.
Cook for approximately 10 minutes until they are cooked through and slightly browned. Serve immediately with smoked salmon and a good amount of black pepper.
